Cocoa Pumpkin Brownies
Ingredients
Cooking spray
3/4 cup butter, melted
1 ½ cups white sugar
1 teaspoon vanilla extract
3 eggs
¾ cup all-purpose flour
½ teaspoon baking powder
¾ teaspoon salt
¼ cup cocoa powder
½ cup semi-sweet chocolate chips
½ cup pumpkin puree
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped pecans
Instructions
Preheat oven to 350 degrees. Spray an 8×8 inch baking pan with cooking spray.
In a large bowl, stir together the melted butter, sugar, and vanilla extract. Add eggs, and mix until incorporated.
In a separate bowl, stir together the flour, baking powder, and salt. Add the dry mixture to the egg mixture and stir just until combined. Remove half the batter into a separate bowl. Into one part of the batter, add the cocoa powder and chocolate chips. In the other part of the batter, stir in the pumpkin puree, cinnamon, nutmeg, and pecans.
Spread half of the chocolate batter into the bottom of the prepared baking pan. Top with half of the pumpkin batter. Add the rest of the chocolate batter, and then the rest of the pumpkin batter. Using the tip of a knife, lightly swirl the batters together.
Bake for approximately 40 minutes (do not over-bake; the brownies will get a bit firmer as they cool). Cool in the pan before cutting into squares.
