Quiche
Ingredients
1 unbaked pie crust (see my recipe in the “Breads/Carbs” section)
4 whole eggs
2 egg yolks
1 cup half and half
½ teaspoon salt
1 Tablespoon olive oil
2 shallots or half a yellow onion, chopped
½ – 1 cup vegetables (I prefer 1 cup baby fresh spinach)
1 ½ cups shredded cheddar or Monterey Jack cheese
Instructions
Preheat oven to 350 degrees F.
In a mixing bowl, whisk together eggs, egg yolks, half and half and ½ teaspoon salt. Set aside.
In a medium skillet over medium-high heat, heat olive oil. Add onion and sauté until translucent. Add vegetables. Season with a pinch of salt.
Spoon vegetables into unbaked crust. Sprinkle with cheese. Slowly pour egg mixture on top.
Bake in preheated oven for 45 minutes. Let stand 10 minutes before serving.
