Quiche

Ingredients

  • 1 unbaked pie crust (see my recipe in the “Breads/Carbs” section)
  • 4 whole eggs
  • 2 egg yolks
  • 1 cup half and half
  • ½ teaspoon salt
  • 1 Tablespoon olive oil
  • 2 shallots or half a yellow onion, chopped
  • ½ – 1 cup vegetables (I prefer 1 cup baby fresh spinach)
  • 1 ½ cups shredded cheddar or Monterey Jack cheese

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl, whisk together eggs, egg yolks, half and half and ½ teaspoon salt. Set aside.
  3. In a medium skillet over medium-high heat, heat olive oil. Add onion and sauté until translucent. Add vegetables. Season with a pinch of salt.
  4. Spoon vegetables into unbaked crust. Sprinkle with cheese. Slowly pour egg mixture on top.
  5. Bake in preheated oven for 45 minutes. Let stand 10 minutes before serving.
