Pumpkin Chocolate Chunk Muffins

Ingredients

  • Cooking spray
  • 1 2/3 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon ginger
  • 1 teaspoon cinnamon
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/3 cup butter, softened
  • 2/3 brown sugar
  • 2/3 white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cup pureed pumpkin
  • ¼ cup water
  • 1 cup chopped semi-sweet chocolate

Instructions

  1. Pre-heat the oven to 350 degrees. Grease a muffin pan with cooking spray (or line with paper muffin cups).
  2. Sift together flour, salt, ginger, cinnamon, baking powder and baking soda. Set aside.
  3. Using an electric mixer, beat the butter and both sugars until well blended. Add eggs, vanilla, pumpkin and water and beat until fully mixed.
  4. Add the flour mixture to the pumpkin mixture, and mix until fully incorporated. Add the chopped chocolate.
  5. Bake for approximately 20 minutes or until a toothpick inserted in the center of a muffin comes out clean
