Ingredients
- Cooking spray
- 1 2/3 cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon ginger
- 1 teaspoon cinnamon
- ¼ teaspoon baking powder
- 1 teaspoon baking soda
- 1/3 cup butter, softened
- 2/3 brown sugar
- 2/3 white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 ½ cup pureed pumpkin
- ¼ cup water
- 1 cup chopped semi-sweet chocolate
Instructions
- Pre-heat the oven to 350 degrees. Grease a muffin pan with cooking spray (or line with paper muffin cups).
- Sift together flour, salt, ginger, cinnamon, baking powder and baking soda. Set aside.
- Using an electric mixer, beat the butter and both sugars until well blended. Add eggs, vanilla, pumpkin and water and beat until fully mixed.
- Add the flour mixture to the pumpkin mixture, and mix until fully incorporated. Add the chopped chocolate.
- Bake for approximately 20 minutes or until a toothpick inserted in the center of a muffin comes out clean
