Let’s stop wasting time trying to make it all perfect, and instead, embrace the sticky chaos and still make something delicious out of it.

Veggie Burgers
Ingredients
½ cup dry quinoa, rinsed
Olive oil
1 small red onion, chopped
1 (15 oz) can black beans, drained and rinsed
2 garlic cloves, minced
1 large egg, lightly beaten
1 Tablespoon Dijon mustard
2 Tablespoons tomato paste
2/3 cup frozen corn
1 teaspoon ground paprika
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 cup rolled oats
1/4 cup oat flour
Instructions
In a saucepan, over high heat, cook quinoa with 1 cup of water until it begins to boil. Immediately reduce the heat to low, cover the pan, and cook for approximately 15 minutes or until the water is absorbed. Remove from heat.
In a skillet, heat 2 teaspoons of olive oil over medium heat. Add the chopped onion and cook for a few minutes, until softened.
Place the onions in a large mixing bowl, and add black beans and garlic. Using a fork, mash the bean mixture. Add egg, mustard, tomato paste, corn, paprika, cumin and salt, and mix well. Add cooked quinoa, oats and oat flour, and stir until well combined.
Using your hands, form the mixture into 6 patties. Heat a tablespoon of olive oil in a large skillet over medium heat. Cook the patties for approximately 3 minutes on each side.
