Let’s stop wasting time trying to make it all perfect, and instead, embrace the sticky chaos and still make something delicious out of it.

Cheesy Egg Muffins
Ingredients
1 cup plus 2 Tablespoons all-purpose flour
½ teaspoon salt
½ Tablespoon white sugar
½ Tablespoon baking powder
3 Tablespoons cold butter, cut into small pieces
½ cup milk
6 eggs
Salt
5 slices bacon, cooked and chopped
½ cup shredded cheddar or Monterey Jack cheese
Instructions
Preheat oven to 400 degrees F.
In a large mixing bowl, combine flour, salt, sugar and baking powder.
Using a pastry blender or two knives, cut in the butter until the mixture is crumbly. Add milk and mix just until combined.
Grease 6 cups of a muffin pan with cooking spray.
Place dough in muffin cups, pressing dough up the sides. Crack an egg in each one. Sprinkle with a pinch of salt. Sprinkle with cheese.
Bake for approximately 14 minutes. (15 if you don’t want the egg yolk too soft.) Garnish with chopped bacon. Serve immediately.
