Cheesy Egg Muffins

Ingredients

  • 1 cup plus 2 Tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ Tablespoon white sugar
  • ½ Tablespoon baking powder
  • 3 Tablespoons cold butter, cut into small pieces
  • ½ cup milk
  • 6 eggs
  • Salt
  • 5 slices bacon, cooked and chopped
  • ½ cup shredded cheddar or Monterey Jack cheese

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl, combine flour, salt, sugar and baking powder. 
  3. Using a pastry blender or two knives, cut in the butter until the mixture is crumbly. Add milk and mix just until combined.
  4. Grease 6 cups of a muffin pan with cooking spray.
  5. Place dough in muffin cups, pressing dough up the sides. Crack an egg in each one. Sprinkle with a pinch of salt. Sprinkle with cheese.
  6. Bake for approximately 14 minutes. (15 if you don’t want the egg yolk too soft.) Garnish with chopped bacon. Serve immediately.
